As I mentioned, I bought a SOLO camp stove that you can cook with, so I figured I had better try it out before heading off. I have a Camp Kitchen that is part of the whole package, so I won't actually need to cook on this, but I thought I would see what was possible. It sort of reminds me of a Tandoori Oven so I marinated some chicken thighs in spices and thread them onto the skewers. I had a red pepper and an Eggplant (Aubergine), and made some Flatbread dough for good measure
The Eggplant and Pepper was charred, peeled and coursely chopped, mixed with garlic, Tahini and Olive Oil and seasoned with a mix of Middle Eastern spices. It was served with a little Harissa and plain Yoghurt. Last but not least, some chopped Endive to add some crunch. The Griddle was perfect for cooking the bread and served as a hotplate to keep the chicken warm. I won't be doing this every night, but it was fun to see what might be possible.
I hooked up the trailer for its 1st test drive and headed off on the Island along the quieter back roads, stopped for coffee, and returned home for the real test of reversing back into the drive. Apart from jumping with every bump and rattle, I soon settled in. I have used a trailer before, but a long time ago. I am glad I did this today. I have had a few sleepless nights worrying about the trip, so this successful return will help me relax..... a bit !!
